- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 lb boneless, skinless chicken breasts (or thighs)
- 2 (15 oz) cans cannellini beans, drained and rinsed
- 1 (4 oz) can diced green chiles
- 4 cups low-sodium chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon chili powder
- 4 oz cream cheese, cubed and softened
- Salt and black pepper, to taste
- Optional toppings: shredded cheese, diced avocado, tortilla strips, lime wedges, cilantro
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté 3-4 minutes until softened.
- Stir in cumin, oregano, garlic powder, and chili powder; toast for 30 seconds.
- Add chicken broth, green chiles, and cannellini beans. Bring to a simmer.
- Add chicken breasts directly to the pot. Cover and cook 15-18 minutes until chicken reaches 165°F.
- Remove chicken, shred with two forks, and return to the pot.
- Reduce heat to low. Stir in cubed cream cheese until fully melted and smooth.
- Season with salt and pepper to taste. Ladle into bowls and add desired toppings.
