Ingredients
Scale
- 1 (15 oz) can pure pumpkin puree
- 1 (12 oz) can evaporated milk
- 2 large eggs
- 3/4 cup granulated sugar
- 2 teaspoons pumpkin pie spice
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar (for cream cheese layer)
- 1 teaspoon vanilla extract
- 1 (15.25 oz) box yellow cake mix, dry
- 1 cup (2 sticks) cold butter, thinly sliced
Instructions
- Preheat oven to 350°F and grease a 9×13-inch baking dish.
- Whisk together pumpkin puree, evaporated milk, eggs, sugar, and pumpkin pie spice. Pour into the prepared dish.
- Beat softened cream cheese with sugar and vanilla until smooth.
- Drop spoonfuls of the cream cheese mixture over the pumpkin layer and swirl gently with a knife.
- Sprinkle the dry cake mix evenly over the top without stirring it in.
- Arrange thinly sliced cold butter pats evenly across the entire surface.
- Bake for 45-50 minutes, until golden brown and bubbling at the edges.
- Let cool for at least 15 minutes before serving.
Notes
- Do not use pumpkin pie filling in place of pure pumpkin puree; the added sugar and spices will throw off the recipe’s balance.
- Ensure cold butter fully covers the dry cake mix layer to avoid powdery, unbaked spots.
