For the Chocolate Cake:

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Mint Cheesecake Layer:

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ teaspoon peppermint extract
  • 3 drops green food coloring

For the Chocolate Fudge Frosting:

  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ cup heavy cream
  • 2 teaspoons vanilla extract

Instructions

1️⃣ Prepare the Cheesecake Layer

  • Preheat oven to 325°F (160°C).

  • Beat cream cheese and sugar until smooth.

  • Add eggs, peppermint extract, and food coloring.

  • Bake for 30-35 minutes, then refrigerate for 2 hours.

2️⃣ Bake the Chocolate Cake

  • Preheat oven to 350°F (175°C).

  • Mix dry and wet ingredients separately, then combine.

  • Pour into two 9-inch pans and bake for 30-35 minutes.

3️⃣ Make the Fudge Frosting

  • Beat butter, powdered sugar, cocoa powder, salt, heavy cream, and vanilla until smooth and fluffy.

4️⃣ Assemble the Cake

  • Layer the chocolate cake, cheesecake, and second chocolate cake.

  • Frost with chocolate fudge frosting and garnish as desired.
