Ingredients
For the Chocolate Cake:
- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
For the Mint Cheesecake Layer:
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- ½ teaspoon peppermint extract
- 3 drops green food coloring
For the Chocolate Fudge Frosting:
- 1 cup unsalted butter, softened
- 3 ½ cups powdered sugar
- ½ cup unsweetened cocoa powder
- ½ teaspoon salt
- ½ cup heavy cream
- 2 teaspoons vanilla extract
Instructions
1️⃣ Prepare the Cheesecake Layer
Preheat oven to 325°F (160°C).
Beat cream cheese and sugar until smooth.
Add eggs, peppermint extract, and food coloring.
Bake for 30-35 minutes, then refrigerate for 2 hours.
2️⃣ Bake the Chocolate Cake
Preheat oven to 350°F (175°C).
Mix dry and wet ingredients separately, then combine.
Pour into two 9-inch pans and bake for 30-35 minutes.
3️⃣ Make the Fudge Frosting
Beat butter, powdered sugar, cocoa powder, salt, heavy cream, and vanilla until smooth and fluffy.
4️⃣ Assemble the Cake
Layer the chocolate cake, cheesecake, and second chocolate cake.
Frost with chocolate fudge frosting and garnish as desired.
