Lemon Herb Chicken with Roasted Asparagus

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 bunch of asparagus, trimmed
  • 3 tbsp olive oil
  • Juice and zest of 1 lemon
  • 2 tsp minced garlic
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place chicken on a parchment-lined sheet pan.
  3. Toss asparagus with 1 tbsp oil and spread around the chicken.
  4. Mix remaining oil, lemon juice, zest, garlic, oregano, thyme, salt, and pepper.
  5. Brush mixture over chicken and asparagus.
  6. Roast 22–25 mins, until chicken is cooked (165°F internal).
  7. Broil 2–3 mins for crisp edges.
  8. Let rest 5 mins before serving.

Notes

You can swap fresh herbs for dried or add red pepper flakes for a spicy version.
