- 2 boneless skinless chicken breasts
- 1 bunch of asparagus, trimmed
- 3 tbsp olive oil
- Juice and zest of 1 lemon
- 2 tsp minced garlic
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Place chicken on a parchment-lined sheet pan.
- Toss asparagus with 1 tbsp oil and spread around the chicken.
- Mix remaining oil, lemon juice, zest, garlic, oregano, thyme, salt, and pepper.
- Brush mixture over chicken and asparagus.
- Roast 22–25 mins, until chicken is cooked (165°F internal).
- Broil 2–3 mins for crisp edges.
- Let rest 5 mins before serving.
Notes
You can swap fresh herbs for dried or add red pepper flakes for a spicy version.
